How can we make this field appear so we can filter?

That can be really frustrating—usually fields don’t show up as filter options unless they’re consistently populated, enabled in the board settings, or supported by the filtering system (some custom or hidden fields don’t qualify). It might be worth double-checking if the field is active, visible across all cards, and not restricted by any permissions or conditions. Have you confirmed whether that field is filled in on multiple cards and supported as a filter type in your setup?
