When accessing the card, it is possible to add or remove assignee using the keyboard shortcut - Space bar.
The way we use this shortcut has hindered more than helped.
My suggestion is to enable or disable keyboard shortcuts.

I usually remove the assignee from the card unintentionally when I press the space bar on the keyboard.
